You can change the list of names using a mod, I'm fairly certain of that, not sure about the list of professions. I think the list of names is just in a text file, find that file in the game files and alter it yourself using a text editor, not officially a mod but it should work (but only on your local system, nobody in a multiplayer game would see the change unless you made it into a mod and put it on the Workshop for other players to download).

Well you can't change their professions you can actually give bots a new name by going to the HR manager in vanilla no mods required. Some mods like the anime girl ones might change the list of default names though.
