Maybe the devs could add a butcher shop where you can make settings for when and how to cull the heard. Add the ability to have a max amount of goats, per se, and if new goats are born, the oldest ones are slaughtered. Shouldn't be too hard to implement.

As for the imbalance between males and females: males and females are born in proportional numbers (1: 2 or 2: 3), the seller also sells proportionally, but it is the player who chooses which wild animals (males or females) he will tame. So if you neglect you can end up playing with a herd of males.
1- Select (to cancel them) all identical tasks at once (and not one by one like today).
2- Put and remove priorities on work tasks (without going to the scene).
