Hereby one could forbid the AI so to speak more than desired of one or more goods in the respective places to create. Unfortunately, as the AI always runs into the next best camp, it usually happens from the middle to late game that they fill up the camps unnecessarily and the production chain constantly gets stuck, if not completely.
I like to play with a city in the middle and several farmsteads outside. Even with some mods that improve the transport, this problem is difficult to master.

Suggestion.
Build one or more castle market, put extra resources in there using caravan pack mules. Buy resources you need in Market. Use Caravans to move/route supplies/resources back to barns located around your village.
