I decided to make the Sarranids Byzantines instead of Saracens, solely because of their unique unit. The Cataphract has a closer resemblence to the Sarranid Mamluke in M&B Warband than the actual AoE2 Mamluke. And as TheDarkProject said, the Byzantine architecture in AoE2 looks the same as the Islamic architecture anyways.
Also, the Turks would be a terrible choice because it's a civ that relies entirely on gunpowder - even more so than the Spanish - and in the world of M&B Warband, there's no gunpowder.
Byzantines are Romans.
