Helm's Deep would be awesome! I was also thinking Cyrith Ungol, where Frodo encounters Shelob. And the Misty Mountains from The Hobbit.

my bad, i was thinking about Helms Deep, not Minas Tirith... but yeah, now i see... without exterior map themes its a bit challenging...
