They Cybermen need to 'eat and sleep' mostly for balancing purposes. Also, its in reference to classic DW lore.

HSSQ; nope, the idea is that the Cybermen all have the same body type, on purpose to help show how the person they once where is gone and the whole 'confirmatory' aspect of the Cybermen.
It would make fighting them a little less dangerous if there was a technique, and balances the race a little
