They are literally in the sprite folder. Just open the correct file for the stage and edit it.

and btw. not icon as in "select screen" icon. i mean the icons you can see in the stage. like the ones used in the ds menus.

Yeh, just search for this map in the workshop folder in here:
C:\Program Files (x86)\Steam\steamapps\workshop\content\383980
Once you do just edit the icons with paint net
