If you use heavy armor classes that provide stability, you'll still dodge, but you can use a block followed by a counter to knock some enemies away so you can recover your stamina. Yeah a block and parry use some stamina, but just one bar should be enough for agile attackers.
Overall even though I wanted a light armor build it's just not viable, or at least not for me. Heavy builds with effective timing on attacks, dodges, and rushes are pretty good. If you do go with a heavy weapon I find opening a fight with a sprint attack and a quick followup attack can lead to a fast execution and little opening for most enemies to hit back.
