1) - 125g dark chocolate (80% cocoa)
2) - 1 Tablespoon of sugar
3) - 3 eggs, with the whites separated from the yolk
4) - 3/4 cup of cream, lightly whipped
5) - 1 Teaspoon vanilla essence

Step 1:
Break up chocolate and melt over water (in a metal basin over a pot of simmering water)

Step 2:
Add sugar, vanilla & egg yolks (the orange centre); then mix constantly until blended & smooth.

Step 3:
Leave to cool (until mildly warm, dont let the chocolate start to set) then stir in (whipped) cream.

Step 4:
Beat egg whites until it forms a white bubbly mix that looks like foam (do this with a blender); then add to the mix, blending it in gently.

Step 5:
Spoon into pots, (around the size as shown in picture) then chill in a fridge until set (2 hours minimum).
