I'd say that medium road tyres are best for all weather, and for spares I usually just keep the same type of tyres as whatever I'm currently using, that way I can rotate them to wear evenly. If I know that my next route is going to be muddy then I'll replace 2 of my road tyres with wet ones and keep my old road tyres in the trunk.
