A single maxed-out chicken will net 1040g, ducks are 1560g, rabbits 10'400g (but cannot be bred, so net profit is 2'400g), and dinosaurs 1300g. With the coop master profession, it is possible to max out the relation with any of those animals in 27 days. This may seem long, but considering the Deluxe coop has a capacity of 12, this means that every 2-3 days you'd be ready to sell an animal. The best candidate for this? Rabbits. Yes, they cannot reproduce, but still the profit margin is the biggest, and they have no incubation periods, as you're buying them already born. And all the while, you're still selling eggs, mayo, wool, etc.
I did a quick calculation for the barn too, and the best animal would be the ostrich, as you can reproduce from eggs, but otherwise pigs, even if you purchase them without reproduction (as you don't know when/if it'll happen). At a profit per pig of 4800g every 2-3 days, this can make you a lot of money, without using any energy or taking much time.
