Sadly ingame options max resolution is 1280x1024. After searching in the internet to find out is there is any way to play it with higher resolutions, I didn't find anything.

Lucky I found the easy fix myself to run the game with Full HD resolution (1920x1080).

1. Make your hidden folders and files visible

In Windows Explorer change Tools>Folder options...>View>Hidden files and folders to Show hidden files, folders, and drives.

2. Finding the configuration file

Go to C:\ProgramData\Disney Interactive Studios\Disney Princess - Enchanted Journey

3. Modifying the settings

Open the disney_settings.ini and change the lines Width=1920 & Height=1080 or to your native monitor resolution.

Save the file.

4. Final thoughts

You can also enable anti-aliasing in you GPU panel to make game look even better.

Extract & move them to your installed game directory (...\Steam\SteamApps\common\Disney's Princess Enchanted Journey) & overwrite everything.

Thanks for the guide for a custom resolution, but this is not enough for a true widescreen as the image gets stretched from 4:3 aspect ratio.
A YouTube user Charlie Brown made (with my little help) a fix [drive.google.com] for 16:9 screens.
