Don't look at score. It's a bad way of telling how you're doing. It undervalues damage and overvalues kill stealing, which is why heavy and engie usually top score in a lobby without a high tour demo, because they tend to have a much easier time stealing kills. Your shield is basically the same function as their minigun or sentry, so you might top score too, but it's a little harder since your single target dps is a bit suffered for hitting many at once.
Again, it's just the wiki so take it with a grain of salt, but it should roughly be the numbers. An additional thing to note is that for target doing damage, it will only count the first 250 in the same hit; thus, to charge quickly, you would prefer to target continuous attacks like heavy/pyro as compared to a demo or sniper.
And yeah, the Overheal Expert is more of a personal playstyle kind of thing. Some love it and some hate it. I won't touch that part but I agree with your point.
