I found (not really, sort of really easy) a way to have simplified Daily Sets on any day of the week. It's simple as is, so follow this and you'll get the 10 set's achievement in no time.

This method involves changing your system date, so follow here:

Navigate to the bottom right of your taskbar and right-click on the date/time


Next, click on Adjust date/time (second from top)


Now, click on Change date and time


And select a date


Now press ok and start your game, and it will load that daily set.

Daily sets are ordered as follows:
Monday: Easy
Tuesday: Mild
Wednesday: Regular
Thursday: Complex
Friday: Demanding
Saturday and Sunday: Random difficulty

Setting your days to Monday-Wednesday will guarantee easier sets.
