if you are on a single screen set up change to triple screen support it will set ur fov at 100+ and you can adjust from the options that unlock when you turn on the setting

Settings in that menu is saved to specific cars, you can set up the view just how you like it for every car, downside is you have to do it for every car once, but i honestly prefer it this way, because the alternative is having to fix the camera every time you're driving another car forever.
My settings hasn't reset for any of the cars i set it for so far, even after game restarts.
