What to expect from this Guide
Hello! I'm on my third now fourth playthrough right now so this guide will be updated as I go.
My aim is to help you prepare for the dangers ahead while using your resources responsibly to stave off hunger!

Town Quests will give you the choice between two option with the exception of the last, both of these have their own pros if chosen. I'll list here what those are, what items you need, where to find/buy them and (if I can get them confirmed) when these quests will trigger.

Get out there and work hard, farmer- the town needs you.

There are no differences in requirements between difficulties.
There may differences in how much of certain items are stocked in the shops, but its a bit of a low priority and this guide is for gathering most resources yourself.
That being said, this guide is built under Normal 'Grim' difficulty!

This guide is complete information wise as of 0.25 version.
First Quest Choices
I've only just started this guide as I'm coming up to the second set of tests, so I'll have more detals done on this again with an alt. playthrough bear with me ;_;

If you've played the demo you should be familiar with the first quest.
You'll be given the choice to pick between creating a Flower Hut, or a Mushroom hut.
Both of these projects generate food items that will be submitted into the food cellar at the start of the day as of the 0.22.22 update.

Hazel's Flower Hut
Start Date: Spring 4
End Date: (Tentaively Spring 19)

The Flower hut is the easier choice needing less resources.
While Hazel mentions that the ingredients can be used for medicine, that doesn't appear to be anything currently involved in the game so you only need to prioritise food.
I actually don't see much of a pro to this one, as herbs give 4 stamina compared to mushrooms which will give you more. But hey, I won't judge what you pick.

Stones: 300
Locations
Stores: None
Mines 1st mine (beside Gruff's house), first 10 floors.
Maps: All over the place except in town.

Stones are pretty straight forward, you will need to go into the mine beside Gruff's house to get enough.

Plant Debris: 100
Locations

Mines None
Maps: Farm
Crafting: None

This stuff won't stop growing in every corner of your farm, you'll be fine.

Compost: 50
Locations
Stores: Hawthorne's General Store, 15 at 10g each
Mines None
Maps: None
Crafting: Compost Bin, takes 3 days or 2 days with Hot Compost skill

You should have a compost bin by finishing a quest from Rose(?), the higher quality you put in the compost the more it will make for you. You can also buy compost from the Hawthorne's store, they stock 15 for 10 gold per piece.

Sticks: 50
Locations
Stores: None
Mines None
Maps: Everywhere with trees and/or branches
Crafting: None

Shake trees! Cut down trees! I believe in you! Best source are the random twigs and branches that are all over your farm and various other areas (Just not in town).
*Unprompted advice, be careful with what trees you cut down! Leave the maple trees alone for now as far as cutting them down goes. Trust me. You'll want the seeds they drop for rations. They're needed for a quest from Rowan and one from Percy too.

Mint: 20
Locations
Stores: None
Mines None
Maps: Forest, seeds can be obtained from wild Mints
Crafting: None

These grow in the forest and can be grown on your farm if you obtain seeds while harvesting. I don't believe Prudence stocks the seed.
They take 4 days to grow so check the forest every day!

Pepperwort Flower: 20
Locations
Stores: Seeds available at Prudence's Bakery, 6 Seeds for 10g each
Mines None, but may be able to find seeds while digging up cracks
Maps: Marsh, seeds can be obtained from wild Pepperwort Flowers
Crafting:

Pepperworts grow in the Marsh and can be grown on the farm with seeds. You can buy the seeds from Prudence for 10 gold each and she carried 6 seeds in stock.
They take 5 days to grow so check the marsh too! They grow all over that area.

Rose's Mushroom Hut
Start Date: Spring 4
End Date: (Tentaively Spring 19)

The Mushroom hut requires a lot of tree cutting but in my opinion is the better option. Mushrooms provide roughly 9 stamina compared to herbs.

Hard Wood: 150
Locations
Stores: Rowan's Carpentry Store, 24 pieces for 10g each
Mines None
Trees: Oak (Forest, Farm & Town. Rusty Axe minimum.) Hawthorn (Farm & Town. Copper Axe minimum) Walnut (Marsh, Titanium Axe, way too early for this!)
Crafting: None

Hard wood can be obtained from Oak Trees with your rusty axe, if you've upgraded to a copper axe you can get them from Hawthorn Trees. Both produce in the fall, so you can cut down the ones outside without any stress.
You can also buy these from Rowan for 10 gold each, he keeps 24 in stock.

Medium Wood: 150
Locations
Stores: Rowan's Carpentry Store, 27 pieces for 9g each
Mines None
Trees: Maple (Forest, Farm & Town. Rusty Axe Minimum), Cherry (Forest & Town, Copper Axe minimum) Plum (Marsh & Town, Iron Axe minimum) Apple (Current Location not accessible at this point in time, Iron Axe minimum)
-also from fallen branches and twigs on all maps except town.
Crafting: None

Medium Wood can be obtained from Maple Trees with your rusty axe, if you've upgraded to a copper axe you can get them from Cherry Trees.
BOTH of these trees fruit in the spring, so I don't advise cutting down more trees than you need to. Remember trees outside will regrow within 20 days, but the ones on your farm will not! Use this to your advantage!
You can get these sometimes from chopping the random twigs/branches lying around the place.
You can also buy these from Rowan for 9 gold, he keeps 27 in stock.

Morels: 10
Locations

Maps: Forest
Crafting: None

Morels grow in the Forest and I believe the Marsh(?). Unlike wild herbs, you cannot plant these on your farm, but you need less of them and their spawn rate is pretty good.
Second Quest Choices
Even if you're not a big fan of fish, fishing can't be ignored for carnivore food in our root cellar. That means there's only one thing to do- or well, one of two. Both are good options, but each benefit one player goal over the other.

what you should keep in mind is that the red tide will eventually diminish on its own, but your choice will also affect to what degree.

Percy's Fish Farm
Starting Date: Spring 25th
Due Date: Summer 11th

Percy's Fish Farm will provide you with a supply of fish at the centre of the town beside the Root Cellar. There's roughly the same 6 type of fish (changing by season), a good option for you later in the game for pickling food, which need three of the same kind of food to preserve them. However given it's not directly impacting ||the red tide's effect|| you'll still be fishing up sickly fish often from the Marsh and Shoreline ||until the red tide begins to recede on its own.|| You will also continue to have your energy drained in the marsh, which can be a pain when travelling to the mines or foraging items.

Clay: 200
Locations
Stores: None
Mines Marsh Mine (2nd Mine) first 10 floors.
Maps: None
Crafting: None

Clay! If you haven't gotten into the second mine yet, now's the time. Seriously, you need clay for either option. Thankfully the walls are literally made of clay- so grab your choice of snack and start diggin'!
Not in the second mine yet? No worries, you just need to upgrade your pickax to Copper to be able to get in. That'll be 20 Copper Bars and 500g to Gruff. It will take him 2 days, so hand it over at the end of a day, gather other supplies the next and in the bright shiny morning after go pick up your sparkly new pickaxe! Truly, we crave the mines.
Oh, Gruff's a little forgetful in his old age (same honestly), so be sure to talk to him twice so he remembers to hand your pickaxes back over.

Planks: 150
Locations
Stores: Rowan's Carpentry Store, 15 pieces for 15g each
Mines All mines, destroy chests once emptied for +1 plank
Maps: None
Crafting: Saw, 60m for one plank per one wood

Nothing to say here, just remember to watch what trees you're cutting down to turn into hard wood flooring.

Stones: 100
Locations
Stores: None
Mines 1st mine (beside Gruff's house), first 10 floors.
Maps: All over the place except in town.
Crafting: None

Juggling between two different mines is a pain, but think of the fish. You know what to do.

Kibble Nibble: 100
Locations
Stores: Rufus' Ranch, 20 for 5g each
Mines None
Maps: None
Crafting: 2 Hay at Crafting Table per Kibble Nibble

Fish gotta eat too! Hopefully you've been planting hay for your critters. ... If you don't have critters, here's me telling you to start investing in them now. *Trust me*.
When harvesting hay, use your scythe instead of just clicking the items since it will give you more hay per harvest.

Iron Bars: 40
Locations
Stores: Gruff's Blacksmith, 4 for 40g each
Mines Ore Deposits in Marsh Mine first 10 floors, bars sometimes in chest of same Mine.
Maps: None
Crafting: Craft from ore, 3h per ore

What a pain, there's so many other uses for Iron ores... It's good to have at least two furnaces for this so you can juggle Iron and Nickel Ore.

Nickel Bars: 20
Locations
Stores: Gruff's Blacksmith, 4 for 45g each
Mines Ore Deposits in Marsh Mine floor 10-20, bars sometimes in chest of same Mine.
Maps: None
Crafting: Craft from ore, 3h per ore

Redtide Remediation
Starting Date: Spring 25th
Due Date: Summer 11th

UPDATE: 0.25 update Cattail lowered to 20!

Lila needs to believe in herself, the effect of Mirebinding is amazing!

I picked this option on my second playthrough and preferred it. It will drastically decrease the rate of Sickly Fish, which is very good if you're trying to complete Adeline's quest and get your reward items (which is 150% worth it). you'll also have more fish in general if you combine the Marsh population with the Shoreline populations. On top of that, it nullifies your energy being drained in the Marsh.

And a really big bonus, it will leave your iron bars alone to be used for upgrades and improvements which I cannot stress upgrading your axe and pickaxe to Iron tier *enough*, especially the latter. You wanna get to level 10 in the Marsh mine for your Titanium for the next town quest; but let's do one quest at a time, yeah? My bad.

Clay: 200
Locations
Stores: None
Mines Marsh Mine (2nd Mine) first 10 floors.
Maps: None
Crafting: None

Clay's the option here too! If you missed what I said for Percy's Fish Farm, you just need to upgrade your pickaxe to Copper with Gruff to access the second mine. It costs 20 Copper Bars, 500g and 2 sleepless nights. Don't forget to talk to Gruff twice so Mr. Forgetful hands your tool back over. NOW GET IN THE MINES.

Plant Debris: 200
Locations
Stores: None
Mines None
Maps: Farm
Crafting: None

Time to start weeding, you might get some good seeds while you're at it if you have the Seed Finder skill (you should totally get the seed finder skill).

Hard Wood: 100
Locations
Stores: Rowan's Carpentry Store, 24 pieces for 10g each
Mines None
Trees: Oak (Forest, Farm & Town. Rusty Axe minimum.) Hawthorn (Farm & Town. Copper Axe Minimum) Walnut (prob still too early for this)
Crafting: None

More Hard Wood? We still thankfully have plenty of time until Fall, so you can take down those wild trees! Or pay Rowan for some extra if you're lazy

Compost: 100
Locations
Stores: Hawthorne's General Store, 15 at 10g each
Mines None
Maps: None
Crafting: Compost Bin, takes 3 days or 2 days with Hot Compost skill

Not again. Hopefully you have more than one Compost Bin like Rose advised, it's a good plan in general.

Red Clovers: 40
Locations
Stores: Seeds available at Prudence's Bakery, 7 Seeds for 10g each
Mines None, but may be able to find seeds while digging up cracks
Maps: Marsh, seeds can be obtained from wild Red Clovers
Crafting:

Don't be scared off by the Red Clover, plant the seeds on your farm with additional compost (Those Sickly Fish have one use at least...) and scavenge what you can from the Marsh- you'll be grabbing them along with the Cattails too.

Cattails: 20
Locations
Stores: None
Mines None
Maps: Marsh
Crafting:

Cattails will be the pain in the butt for this option, but since the update they grow much faster! You can't plant these, so you're at the mercy of the marshes.
Third Quest Choices
Kai's Hunting Party
Start Date: Summer 16
End Date: Summer 28

This option will give you a pretty decent chunk of meat for the root cellar, which you should preserve straight away. The downside is, this is a one time bonus. But I mean, it DID kill one of the poor Alpheeps, so I'm sure Rufus would appreciate it.

Planks: 150
Locations
Stores: Rowan's Carpentry Store, 15 pieces for 15g each
Mines All mines, destroy chests once emptied for +1 plank
Maps: None
Crafting: Saw, 60m for one plank per one wood

Pretty standard amount honestly.

Iron Bars: 40

Locations
Stores: Gruff's Blacksmith, 4 for 50g each
Mines Ore Deposits in Marsh Mine floor 10-20, bars sometimes in chest of same Mine.
Maps: None
Crafting: Craft from ore, 3h per ore

See why I told you to dig? This one nearly took me by surprise, so I hope you're prepared. It's only a small amount, and you may even have been buying them already from Gruff. Pricey, but you need them for tool upgrades later anyway.

Hide: 20
Locations
Stores: Rufus' Ranching Shop, 3 for 15g each
Mines None
Maps: None
Crafting: Butcher's Table

The game's added some for sale at Rufus' store, but given they only restock once a week... Well :(

Tano's Predator Taming
Start Date: Summer 16
End Date: Summer 28

Tano's choice is the best choice for longevity, as taming the monster instead of killing it will give you a supply of meat at the end of the day the same way that the Flower/Mushroom huts will. With the rations increasing, I'd recommend this over the one-time carnivore food boost killing the fella would give you.

Planks: 100
Locations
Stores: Rowan's Carpentry Store, 15 pieces for 15g each
Mines All mines, destroy chests once emptied for +1 plank
Maps: None
Crafting: Saw, 60m for one plank per one wood

Not a bad amount, especially if you've had your saws going for all your other barn and coop upgrades.

Nickel Bar: 20
Locations
Stores: Gruff's Blacksmith, 4 for 45g each
Mines Ore Deposits in Marsh Mine first 10 floors, bars sometimes in chest of same Mine.
Maps: None
Crafting: Craft from ore, 3h per ore

Nickel's pretty easy to get, especially if you've already been firing them up to make your Fermentation Barrels. Buying them from Gruff's shop should help with this to!

Iron Bar: 40
Locations
Stores: Gruff's Blacksmith, 4 for 40g each
Mines Ore Deposits in Marsh Mine first 10 floors, bars sometimes in chest of same Mine.

Crafting: Craft from ore, 3h per ore

Darn it, that's a lot of iron... The things we do for this town.

Titanium: 10
Locations
Stores: Gruff's Blacksmith, 4 for 50g each
Mines Ore Deposits in Marsh Mine floor 10-20, bars sometimes in chest of same Mine.
Maps: None
Crafting: Craft from ore, 3h per ore

You can't escape the need for titanium. It's only a small amount, and you may even have been buying them already from Gruff. Pricey, but you need them for tool upgrades later anyway.

Blood: 20
Locations
Stores: None

I wish there was an alternative, but there's not. I hope you've treated your critter's well; as Rufus says 'Your Critters should only ever have ONE bad day.'

:( Same as above. I hope you're less attached to your Critters than I was.
Fourth Quest Choices
Adeline's Crow Repellant
Start Date: Fall 10
Due Date: Fall 26

Adeline's kinder option to the current disaster, you'll be tasked gathering with supplies to make scent building torches kindly dissuade crows from taking roost in the town (understandable, I hate the smell of parsley myself.) Time to dedicate some of your farmland to growing herbs...

These will take 5 days to grow, so plant some while you forage the others.

Beryl's Crow Traps
Start Date: Fall 10
Due Date: Fall 26

I love crows, but they're made of meat and the root cellar needs filling. Much like Tano's Predator Taming, this quest should supply you with some additional meat in the root cellar. The dialogue mentions some crows should still linger, but I've never seen any since completing the quest so my crops have been safe without Scarecrows. This must have been a bug and has since been fixed, these feathered jerks will absolutely still linger and eat your foraged items if not picked up and harass your crops now. This means they won't been in the lost and found if left behind, so be aware!

The Final Quest
Last Stand
Start Date: Winter 1
Due Date: Winter 13
The Defender's Rations? The ship will be delayed and you will have some additional time. Listen for Fin's alarm, stay stocked...

I hope you upgraded your axe and pickaxe cause next we're upgrading the church! Sadly not with spikey barricades or GUNS, but we work with what we've got!

You'll be juggling having to stock 40 Days worth of food in the root cellar, but you have a little more time. Keep an ear out for Finn, don't panic, but don't get complacent! If you've planned and taken advantage of your fermentation barrels, you'll get by without any problem.

Planks: 300
Locations
Stores: Rowan's Carpentry Store, 15 pieces for 15g each
Mines All mines, destroy chests once emptied for +1 plank
Maps: None
Crafting: Saw, 60m for one plank per one wood

Your best bet by now is to have multiple saws and keep them all going at once. Split your wood stock into smaller amounts if you need to get them all going, it will work faster. Only use your Hard Wood if you've already submitted 200 for the next requirement.

Axe and Tree/Wood Cheatsheet
If anything this is for me lol. I try to keep a list of what axes you'll need for what tree to get wood you need, where you'll find them... The information is basically just all listed but in different ways for convenience of what you need at the time.

All trees in the wild take 20 days to regrow, so in Spring you can freely harvest those that will fruit in Fall and so on :)

I'll make it pretty eventually (Which will help with making this guide more accessible regardless of language!) In the meantime, all I can offer is text.

There are 11 trees total, the final Apple trees are locked away until the third town project or gifted as seeds by Rowan.

Total Tree Overview (Fruiting-Location-Wood-Axe):
Plum Trees: Fruits Spring 5-18, Found in Marsh. Provides Medium Wood. Requires Iron Axe.
Cherry Tree: Fruits Spring 15-28, Found in Town & in Forest. Provides Medium Wood. Requires Copper Axe.
Maple Tree: Fruits Spring 22-Summer 8. Found in Forest & Farm. Provides Medium Wood. Requires Rusty Axe.
Birch Tree: Fruits Summer 9-Summer 23. Found in Marsh. Provides Soft Wood. Requires Copper(?) Axe.
Pear Tree: Fruits Summer 16-Fall 2. Found in Marsh. Provides Soft Wood. Requires Iron Axe.
Apple Tree: Fruits Summer 28-Fall 13. Found in Mire. Provides Medium Wood. Requires Iron Axe.
Oak Tree: Fruits Fall 8-Fall 21. Found in Forest & Farm. Provides Hard Wood. Requires Rusty Axe.
Walnut Tree: Fruits Fall 10-Fall 23. Found in Marsh. Provides Hard Wood. Requires Titanium Axe.
Pine Tree: Fruits Fall 12-Fall 26. Found in Forest & Mountains. Provides Soft Wood. Requires Iron Axe.
Hawthorn Tree: Fruits Fall 17-Winter 2. Found Farm & Town. Provides Hard Wood. Requires Copper Axe.
Juniper Trees: Fruits Winter 6-Winter 20. Found in Mountains. Provides Soft Wood. Requires Copper(?) Axe.

By Axes:
Rusty Axe: Oak, Maple
Copper Axe: Oak, Maple, Hawthorn, Cherry, Juniper?, Birch?
Iron Axe: Oak, Maple, Hawthorn, Cherry, Juniper, Birch, Pear, Apple, Plum, Pine
Titanium Axe: All Trees

By Wood Type:
Hard Wood: Oak (Hard, Rusty Axe) Hawthorn (Hard, Copper Axe) Walnut (Hard, Titanium Axe)
Medium Wood: Maple (Medium, Rusty Axe) Cherry (Medium, Copper Axe) Plum (Medium, Iron Axe) Apple (Medium, Iron Ax)
Soft Wood: Birch (Soft, Copper Axe), Juniper (Soft, Copper Axe), Pear (Soft, Iron Axe), Pine (Soft, Iron Axe)

By Locations:
Most trees except Apple can be found in town, most are cherry but with one or two speciments of the other types. iirc Birch is also absent.
Mountain Contains Junipers (Soft), Pine (Soft).
Marsh Contains Plum (Medium, Iron), Birch (Soft, Copper), Pear (Soft, Iron), Walnut (Hard, Titanium)
Forest Contains: Cherry (Medium, Copper), Maple (Medium, Rusty), Oak (Hard, Rusty), Pine (Soft, Iron)
Farm from the beginning contains Maple (Medium, Rusty), Oak (Hard, Rusty), Hawthorn (Hard, Copper)

To do: Confirm Copper Axe for Juniper and Birch trees post 0.25 update (Gotta wait for my trees to regrow)

Oo I hadn't noticed that at all! It never seemed clear in the wording to think to check haha. I'm planning on doing a fresh playthrough now that the stoat is released so I'm excited to check that out and confirm :D

I think Percy's Fish Farm also gives you extra fish for the root cellar, the same way projects like the mushroom hut, etc. do. At least I always had fresh fish in the root cellar, after I completed Percys quest (on grimm/normal difficulty, at least.)

Maybe it's already mentioned in the guide and I just missed it, or something else got me the extra fish. ^-^

Dang that bites, while I was updating I went with Adeline's plan so I entirely missed that getting updated/fixed. Sorry you have to deal with it now! I'll get the guide amended for those changes, hope you can get some vengeance by eating them and their friends at least.

Update to your guide. I finished the fourth quest. And, given your comments, I picked Beryl's Crow Traps.

After I finished the quest, the crows didn't go away. They're still eating my crops and the foraging fruits and veggies, but I do get meat from the crows now. Not sure if they fixed it, but yeah, I regret going with the crow traps now, just because it didn't get rid of the crows.
