After spending double the time I had with the rest of the achievements, I was finally able to get this one. Since there was no guide as to how to get it I decided to write my own so that hopefully in your case (if you ever decide to play and fully complete this game) you wouldn't spend so much time on it. Take into account that this is based on my experience alone so there must be better ways to go about it.

Objective
The Untouchable achievement can be obtained by completing the Challenge of the Yaguareté without getting a single hit. It involves going through a variety of rooms where you have to press a button (in the first 2), defeat the enemies and then move a ball towards a hole. That's basically the jist of it and the challenging part comes in how to avoid the attacks and deal with the enemies as you'll sometimes find that from the space you have available, the camera and other factors this can be easier said than done. Fortunately (or rather unfortunately) after retrying it so many times I was able to notice some patterns and tactics that would make it easier for the newcomer to obtain it (all the while putting some practice on their own that is).

Note: the challenge goes from the last checkpoint in the River Road up until defeating the last enemy. If you get hit and use the mate to go back to full health it doesn't count. Any hits prior to the checkpoint also don't count so as soon as you get hit you can restart from the pause menu.
Tips
Now that you know what you have to do here are some tips to take into account:

1. The terrain is uneven. What this means is that Runa could potentially walk into some slope on the floor or obstacle and either get stuck or change its height slightly. This also applies to enemies and is something to pay attention to while dealing with flying ones. As such, in order to not get stuck I recommend jumping just in case.

2. The camera is always top down but also quite limited in scope in borders and as you descend to the smaller rooms. As a result, the enemies will most probably attack you from off screen so it's good to know where all of them are at all times, specifically the flying ones.

3. Your boleadoras weapon sucks for precise attacks. If you spam it Runa will take a step forward making her more prone to collide into an enemy and get hit. She also can't attack flying enemies if they aren't at the proper height (refer to 1.). With that in mind, the safest way to hit enemies is to either do one hit and immediately back up in case they attack or take a small 1.5 seconds point between attack, which is riskier but works for the red snakes.

4. The flying enemies are the fastest and the ones with the higher range that could hit you from a great distance at full force or via a sonic wave. Since after attack they take a small break, that the time to attack in case you're in range. Otherwise back up in order to not get hit.

5. The red snakes attack you if you are in range of sight and will roll towards you in a straight line after a full second. You can use that time to attack them multiple times and get rid of them quickly but don't be greedy as the inaccuracy of your weapon may work against you.

6. The white snakes only attack you if provoked but unlike the red ones after a sinlge hit them keep chasing you. Don't hit them twice with 2 consecutive attacks as you will run into them by accident, just do one hit, back up and then the other one.

7. The glitches and the performance coudl work against you depending on your set up. If it tanks or you encounter unkillable enemies or them stuck on walls I'd suggest going to the setting and lowering the graphics setting. Then restart the game and try again.

With all of this in mind, it's time to go to my strategy.
My strategy
Here I'll describe what I did naming the rooms 1-5 by the order the game presents them to you.

Room 1: Press the button and immediately go to the right and get a hit off whatever is in range. Quickly back up to the left and either take first the red snake or the flying enemy. In case one or more of the white snakes get caught in the first hit, quickly dispose of them and then deal with the red snake or the flying enemy. Once you do that you can take one by one the rest of the white snakes and put the ball into place.

Room 2: Press the button and immediately go back to room 1. This will cause one of 2 things: either the flying enemies will be the only ones to notice you and you can take them out one by one only dodging their attacks and without dealing with the snakes, or (if you're lucky) they'll get stuck in the pillars of the door in which case you'll be able to hit them from the order side without them approaching you. The number of enemies that can chase you back to room 1 varies from 1 to 4 so don't get disheartened if you get all 4 of them as that may change depending on speed and placement. As before, after taking out the flying enemies I suggest going for the red snakes and finally the white snakes. Take also into account that sometimes one of the flying enemies path can change and suddenly attack you after a single hit so beware of that.

Room 3: You start by placing the ball from the right into the hole on the left. Here I suggest not jumping down immediately but instead waiting a few second for all of them to get into the middle. Then you can jump down and slowly lure enemies one by one from a somewhere you'll be able to dodge their attacks. The order depends on proximity so sometimes I go first 1 or 2 white snakes, then a red one, then another white one, a flying enemy, and so on. Remember that here the terrain of the ruins is very uneven so don't get stuck.

Room 4: For this one it took me a while to figure out a strategy as upon putting the ball in the hole in the bottom right I immediately got hit by a flying enemy. As such I suggest I suggest going to the supper right part of the circle from room 3 without jumping down and luring there the flying enemy from the left as the right one will get stuck. Dealing with one is easier than dealing with both at once as you'll be able to practice dodging only 1 attack and hitting at the right time. Once you get rid of it, go to the left (still not jumping down) and deal with the right flying enemy in a similar manner. With both taken out take some time to notice any gaps where you can jump down to and try to lure the snakes to attack you in some space where you'll be able to counter them. Do this slowly as the lack of space may make you impatient and get a hit.

Room 5: This is the smallest room and features 3 flying enemies and multiple red snakes. In order to deal first with the former I suggest as soon as you get the ball into the hole in the left going up left and attack the enemies as soon as they are in range. You may be able to hit all of them at once as that's the place they spawn from and even get rid of them quickly. In case you don't then keeping running and jumping in circles in one direction, paying attention to their attacks in order to find a window to counter. Once you get rid of them pay close attention to the room below you and down to where you'll have the most space to deal with the red snakes. One of them may get your aggro before you jump down so keep that in mind.

If you are able to pull of this in proper fashion, you'll unlock the achievement as soon as you kill the last enemy in room 5.
Final thoughts
This was a very annoying achievement and one that doubled my playtime but also kept me on my toes for dealing with some of the issues I have with the game which I've detailed on a recent review. I'm by no means an expert in this genre so in case you're able to find a more suitable strategy feel free to write it down in the comments.
