Okay, so I've found 91 notes too. See the guide below, but there's 1 more note in chapter 2 (in the final barn, next to list of targets) and 2 more notes in chapter 4 - all at the Villa Torrisi - 1 next to Valentina and 1 in Enzo's room. The employee memo is listed 3 times in chapter 6, but it's the same note.

So....91 notes for me, too..

I have found 91 notes so far.
Don't know what this says about the overal ammount of notes actually in-game.
I've started thinking maybe there are 100 of them (a full round number) because 91 just seems such an odd number?

One note I see many guides miss in Chapter 2 (Palio) is located on the right end of the red-and-white striped booth with the "Palio di San Celeste" banner.
