Navigate to the local files
Navigate to CharMeta folder
Within this folder all the data associated with both the player character and NPCs can be found. The .ZEX files within can be edited with notepad.
Copy the .ZEX files you are editing here to have as a back up if you wish to return the game to how it was before. Alternatively deleting and re-downloading the game will also reset every file you changed to its default.

Choose a file you'd like to edit
In this example i'll be changing the mhp value of the fallen engineers to 1 thus changing his health to 1 and dish's mhp to 900 thus changing his health to 900; however, you can change other aspects to suit what your looking for. You could just as easily make the engineers health 900 and dish's 1.
900 is the highest value ive found that actually results in change. Anything above 900 and there is no increase.

Ensure you change all files associated with the character
Dish has numerous files associated with him, all of which are used by different part of the game. I have not been able to figure out which file is used where. For instance which file is used for a dish play through of the story mode or which file is used for hegraves and loic in arcade mode. Regardless if your unsure its best to change all of them. Especially if you have a back up of the unedited files these can be easily pasted back into the CharMeta folder returning the character back to how they where before. This applies to all characters including NPCs as there might be more then 1 file associated to them so if you aren't seeing results you might have forgotten to change a file.

Results
Behold super dishwasher

one hit in story mode hehehe

one hit in arcade mode B)

Conclusion
This method works in both arcade and story mode, and can be done to both dish and yuki.
A mod exist using this exact method to increase the difficulty of later bosses while making early game bosses easier.
Its called: Rebalance
