I used the following ffmpeg commands to separate even and odd frames

I had a hard time separating the real vs generated in a lot of videos, Sonic Mania seemed to work easier than most though.
Maybe investing in a capture card rather than using software capture would help *shrug*

Odd Output:
ffmpeg -i input.mp4 -vf "select='mod(n,2)',setpts=PTS-STARTPTS" -r 30 output_odd.mp4

Even Output:
ffmpeg -i input.mp4 -vf "select='not(mod(n,2))',setpts=PTS-STARTPTS" -r 30 output_even.mp4

60fps video input odd even 30fps side by side:
ffmpeg -i input.mp4 -filter_complex "[0:v]split=2[v1][v2];[v1]select='not(mod(n,2))'[even_sel];[v2]select='mod(n,2)'[odd_sel];[even_sel]setpts=PTS-STARTPTS,fps=30[even];[odd_sel]setpts=PTS-STARTPTS,fps=30[odd];[even][odd]hstack[v]" -map "[v]" -r 30 output_side_by_side_30noaudio.mp4

120fps input odd even 60fps side by side:
