You can replay missions.
You can replay any mission.
The whole "resetting" missions, if for people that want to fundamentally change the story, as in changing who lives and dies.
It's like Halo on the Master Chief Collection, you can replay any level, you can get all challenges for each level in any order. You do not have to do all the challenges in a single mission in one go, it can be spread out, going for whatever is your fancy.
But to get the achievement, you need 160/160 challenges unlocked. That is why I recommend the save file provided in the guide by 8bit.
Otherwise, I recommend going for a bit of an achievement, something like kill 1 person from a list of 10 with a grenade or something like that, back out, start a different level, and see if the stats have changed or not.
