⠀⠀⠀• do not worry if it is only 1 damage per shot, keep shooting
⠀⠀⠀• use Fairy Step to evade
⠀⠀⠀• if the Mimic is too close, use Jewel Bomb to push it back

Avoid using items to heal when you are alone because they are very slow. Most often the mimic will hit you before you recovered, causing even more damage. Instead, take advantage of Rockbreak / Treechop Regen. Evade and destroy rocks / trees on the way.
