Weapons
Bows: Usually Longbows will be better than hunting bows due to them having longer range. Hans Capon's hunting bow, is the best of the hunting bows that is an exception to the rest due to its low requirements for the amount of damage it deals.

Arrows: Mid to higher damaged arrows (110 - 150 stab damage) will be better for the bigger animals that take a bit more to kill. You should be able to kill smaller things like hare with the cheaper and lower damage arrows.
Potions
Potions are not really a requirement, they will just generally make hunting a lot easier, especially if you are just starting out.

Buck's Blood will increase your stamina by 50% for 10 minutes. This will increase the time you are able to hold the draw back on your bow.

Bowman's Brew will increase your bow skill by 5 for 10 minutes. This makes it so you do not shake as much while drawing back on your bow.
Trainers
This is not needed at all, but if you have lots of gold to waste and just want to level hunting quicker, you can level at the two trainers for hunting in the game.

Nicholas Angel is the Master Huntsman of Talmberg. (If you have not completed the quest Cherchez la Femme)

Berthold is the Master Huntsman of Rattay.
Animals
The animals you can kill to get hunting experience are going to be:
  • Red Deer
  • Roe Deer
  • Hare
  • Boar

Any other animal you kill will just give experience to your bow, unless you have some other weapon equipped (but why would you run after a deer with a sword!)
Bonus Tips!
Have a horse with a saddle for lots more inventory space for the heavy meats.

Smoking, Drying, or Cooking your meat can be a good idea if you plan to sell it.
