Pickers will only swing 180 degrees, and can only be used in two opposing cardinal directions. If you want to make L-shaped manufacturing, you need to have the pickers put the item onto a conveyor belt.
Underground Conveyors need an Aboveground Conveyor Belt to work. The Underground Conveyors effectively act as a teleporter within 10 spaces in a straight line, ignoring water, gaps, and walls, so they're useful to bypass construction and keep those spaces free for other things.
An example set-up goes:
[olist]
[*] Electric Furnace
[*] Picker
[*] Aboveground Conveyor Belt
[*] Underground Conveyor Entrance
[*] Underground Conveyor Exit
[*] Aboveground Conveyor Belt
