Once you've clicked New Game and selected a start date and scenario, click Play as any ruler(...), select one of the existing rulers, and click Create your own ruler. Click Change Appearance (change it to Male if you've selected one of the existing female rulers) and click Paste DNA (which you copied from Pastebin).
