You will have wasted so much time by irrigating with tier 1 tools. Regardless of hunger and thirst being frozen.
As far as "lack of water", don't irrigate so much. Your water is evaporating. Yes, this is a mechanic of this game.
Making use of Spillways would be a smarter water preservation and expansion method.
Just... dam the water so you have a series of small ponds.
Later in the game, you end up with so much water production and better terraforming tools.
TL:DR;
Play the story. Plan Ahead. Don't worry about making pretty gardens until after the story missions are over.
It's worth mentioning Essence use. This is another softlock. I made a post warning people about the soft lock there, and I was directed to your guide, but it doesn't mention it :)
(To be clear, it was awhile ago so I don't remember the EXACT details of the softlock, but it's possible to not generate enough mana at nightfall to progress the quest... IIRC it was caused by getting rid of the plants I didn't want because I knew they were incredibly easy to get and just waste space early game, such as the mushrooms.)
I would love to see a screenshot or two or a diagram of your layout too. I love the idea but, as the previous commenter said, I’m also having a hard time visualizing your concept.
Some more screenshots would be amazing -- at different stages of construction and one that lets us see as much of the finished product as possible; a video of you doing some of the shaping would be phenomenal, but I realize that requires a significant time commitment.
