All internet posts stated that the saved games are located at C:\Users\<Username>\AppData\LocalLow\SomethingExtra\ToTheCore.

That's a lie! (or simply deprecated)

After 2 hours of investigative debugging, I can now show you the solution and hope you save yourself unnecessary headaches when it comes to saving your save game.
Backup
1. Open regedit.exe (Win+R, type regedit, enter)
2. go to Computer\HKEY_CURRENT_USER\Software\SomethingExtra
3. right click SomethingExtra, klick export
Restore
1. delete Computer\HKEY_CURRENT_USER\Software\SomethingExtra\ToTheCore (if exists)
2. execute previously exported file

Saves are still in the registry on the moment of writing.
This was somewhat a pain to move them to Linux installation, when running game using Proton.
But this post helped

this is going to change soon as im going to have it save as a json in appdata in the next update.
