If you want to mod the coat of arms, you have to find the files and folder where the coat of arms are located, then specify that path in the mod file so that the replacement files and folders can override the originals. Read more about that in the CK3 wikia.
Also I noticed, that most have of course in our european exaples a "christian" history/tradition or meanings - like in some of yours, too...
Somehow it can be "programmed" for sure - like when you change e.g. the religion in Denmark - also the CoA will/can change...(before that it doesn´t make sense to use christian symbols as a pagan...so there could be sometimes made also different variations depending on the religion or the "real meaning" of a location - that way there could be different CoA constructed...)
My focus was mostly on the (western) slavic regions and also the celtic ones...
Would be nice if more people could work on this together...
