The trick to getting "S" Rank for the different stages is simple.

Simply click "Add New Preset" then > "Edit Preset" and modify the stages to your advantage by dragging the slider
i.e. More lives, more time, higher spawn time, more targets, target size etc

*Note that dont give yourself too much lives or times for certain stages because the game will require them to countdown to 0 to record your progress
