If their AI scripting hasn't changed, I would get close with one villager, ranged one, preferably crossbow, pull the enemies aka hit them once, and then, while keeping just ahead of them, draw them to my defensive spot.
How do you bait them into coming at you, vs. going after someone or something else (like a convalescing or other villager who's not fighting, etc)

No, you just have to wait and every 10-20 days you will have a new event which will get you a new villager.
