google spreadsheet
This opens the google spreadsheet for all the juicy details[docs.google.com]

it should be pretty self-explanatory for the most part:
  • at the very top (or by using the according sheet) you can see the stats for your current bartering skill level
  • sorted mostly by category / production facility
  • value and weight are given values by the game
  • the "price / item" is what you would get for this item at the set bartering skill lvl from any trader
  • what the colours in "profit / item" mean:
    • red: negative profit (not worth crafting to sell; not accounting for secondary products such as grains or straw)
    • blue: uncraftable items, raw resources you or your village gather, hunt, collect, ...
    • green: positive profit (worth crafting compared to selling the ingredients directly)
    • darker green: so incredibly profitable that you even make money when buying all the raw ingredients from traders (see the coloumn "profit when buying raw ingredients for more detail)
  • "price / kg" is useful if you want to make the most money with the least amount of legwork.
  • the cost per item is calculated from the money you could have made by selling the raw resources. More complicated items use the cost of intermediate products.
  • "profit per resource" lets you easily compare how much profit you get per resource (while ignoring other used ingredients, priority given to more limited resource):
    metal
    colour
    sewing
    colour
    copper
    orange
    linen thread / fabric
    yellow
    bronze
    yellow
    wool thread / fabric
    gray
    iron
    gray
    leather
    brown
  • "profit when buying raw ingredients" shows you how much you profit when buying all the raw ingredients for this item at your current bartering level
  • "crafted stack" is the amount of items crafted in one recipe (default is 1)
  • behind the vertical line are the required ingredients

what this guide does not take into account is the availability of crafting stations; some things (like beverages) require late game technologies and are thus not that useful early on (when this guide is the most interesting)

  • new coloumn "profit per [metal / leather / linen / wool]" to quickly see what is the most profitable use

15.02.2021:
  • created and posted a link to the google spreadsheet version of this guide in overview

in my dreams:
  • make the dropdown box for bartering skill level and the collapsable categories usable for everyone
  • include production rate per skill-point of a villager
  • use that to calculate "most profit per day"

The bronze spear for example is not good, because it needs a linen threat. thats quite some expensive ingreadient too. so the costs of opportunaty here are still big, because you either need to buy or set up an entire linen production chain) however if you have all the buildings maging poisened ammo is great, just don't let NPC's make the ammo and the poison, for soem reason they have horrible crafting rates. let them just gather the berries, make the poison and arrows/bolts yourself. also spears are heavy to transport compared to knives

tbh, the most important factor here is time involved, because costs of opportunaty apply a lot too.

ususally the best money making is a smith next to a mine. gather the ores, make bronze bars and copper bars (there is more copper than tin). Then I sell the bronze bars unless I have bronze tech unlocked, make and sell copper knifes. Knifes just need a stick, yes ammo is a bit more proficient, but you first need to get feathers and also 10 sticks. So unless you have people in workshops doing that for you it is i my opionion not worth the time to do them.

updated to v2.0.2.4 again a false changenote: waterskin is still worth 40
with these changes there is a new kings
bronze: the spear at over 200 per bronze ingot is even better than poisoned ammunition!
for linen products at over 100 the noble boots overtook the bag

updated to 2.0.2.1 the changelog mentions a change in price for the horseshoes aswell - but it still is at 250...
