The creators of Mythos Reawakening, PVGames, have a bunch of other taller/more realistic sprites for sale, so I'd recommend checking them out.
MV can display sprites of any size, not just chibi. You just need to place a "$" at the beginning of the image's name for them to display correctly if they're not the default 48x48.
To answer your question, you can still use normal sprites while Parallax Mapping. It's just that the graphics you're using need to be in a relative height to the normal chibi characters for things not to look off. As for my personal opinion however, I don't bother making full maps Parallax style if I'm using chibi graphics, since it's just easier to use the in-engine mapper. That said, Parallax mapping does still come in handy for placing weather effects and for putting down special graphics that just don't translate well to the Engine (For example, I Parallaxed in a pile of dead bodies and bones that I made myself).
