Just because the icon for Exotic food is a bunch of pieces of sushi doesn't mean it's all asian foods. It's pan-fried, often flambee'd fruit, a very uncommon preparation method for a dessert, ergo exotic.

Besides, this goes by what number increases after finishing the day serving the food, I have 84 Exotic served despite not owning anything from that category aside from Bananas Foster.

Bananas Foster is an American dessert created in New Orleans in the 50s, are we SURE it counts in the Asian (exotic) food category?
