I did this about a month ago, so don't remember all the details, but here's something.
1) Once captured siege from the engineers, immediately travel across the river, actually, right under the Jin's base. Don't be afraid, they won't attack you until you start attacking them, and also you are safe, because you are on the isolated island where other AIs can't reach.
3) Eco: build 4 houses, Town Center and a Dock; fishing ships gather food from fish, request several villagers in TC while you're setting up the required buildings for moving into Castle Age (Blacksmith and Market), the rest are chopping wood and/or hunting boars/deers.
4) Advance to Castle Age as soon as you can, there's no way you can beat Jin in Feudal. Research upgrades for Light Cavalry and Archers.
6) Jin train only Knights, Cho-Ko-Nu-s and Monks, so counter them with mix of Monks, Pikemans and Light Cavalry + Cavalry Archers that you have from the very beginning as an additional cover.
7) Destroy towers and gates with your castle, the remaining towers that could disturb you (mainly those near gold mine), can be destroyed by rams.
Put pikeman inside for maxing rams damage/speed and use archers for cover.
Raid Jin economy with your LC and CA distracting the knights, when possible convert knights with your monks, the rest lead under your castle cover and kill with pikemen. Cho-Ko-Nu can be easily countered with stolen knights or 3-4 LCs, monks only with LCs.
9) Once the last tower went down, send your villagers to mine gold, build a wall right from the trees on one end to Jin's wall on the other end. I took like 10 villagers and also built my own defensive tower there.
10) Now you have a plenty of gold, so nothing stops you from eliminating Jin. Train Mangudai and more Rams. I dropped another castle as close as possible to their Town Center and was lucky to run with a couple of my villagers to the area where they used to build a Wonder and built a tower there :)
Approximately a minute later Jin surrendered.
