General remarks
It is important to find the optimal route for the Katamari to grow to the size needed to catch greatest bear respectively the greatest cow.
Make Ursa Major: Kintaro-Baer
The platform with the polar bear can be cleared if one isn’t big enough to catch the bear. The Katamari needs a size of 4m62cm to catch the Kintaro-Bear. If you are big enough it will run away if it recognizes you. The position under the trees above the starting point is optimal to wait for the Baer.
Make Taurus: Holy Cow
More than in the Ursa Major stage it is important to grow fast. The bulls will attack you if you are smaller then they are. Alongside the Holy Cow there are 4 Cow men that can be easily caught instead of it. Just watch the beginning of my video. The Katamari needs a size of 7m8cm8mm to catch the holy cow.

Highly helpful, thanks for showing how to 100% the rest and are arguably the 2 hardest challenges in the game.

Ursa Major honestly isn't too difficult, since the only thing you have to be really careful with is the road, while Taurus very much is so.

The Upper Town road layout is a mess, since the Holy Cow is surrounded by other cow things. Your Taurus video was an early warning to avoid the cowmen (or kuhmensch) for me, and thankfully I never hit them cause of it.
