A list of items that you should definitely look out for if you're wanting to get a 100% complete items list.

These items are items that, if you don't get it the first time, you won't be able to get again.

(This list is a compilation of my own findings and information from multiple websites but all verified and wrote in my own words!)

Missable Items on Disc 1!
Sector 7 Slums
  • Puchase the Iron Bangle from the accessory shop, this will be un-purchasable later in the game.

Train Graveyard
  • Steal a Ghost Hand from a Ghost, you can also get it as a drop. You can't get this item at any other time.
  • Defeat Deenglow or Cripshay enemies or a chance to obtain Graviball. (Can be obtained one other time on Disc 2 as a rare steal from the annoying Shadow Maker enemy in Sector 8 on your return to Midgar.

Shinra HQ
  • Check the bulletin board on the first floor for the Turtle's Paradise notice. This is 1 of 2 chances in the game to see the notice.

  • On Floor 63 you have a chance of grabbing some coupons. DON'T trade these in to get prizes as they are unique items. To get the items you must open the first door on the top and the third door from the right, go into the first room and grab Coupon A. To get to the other room you have to climb into the air duct to grab Coupon B. After this you can open the door blocking the middle room to get Coupon C. The computer in the room allows you to exchange the coupons for these items: Star Pendant, a Four Slots, and an All Materia. These can all be found later in the game, coupons can not so keep them!

  • After beating the boss on the 68th Floor, grab the Enemy Skill materia that's on the floor.

Cargo Boat
  • After your team has regrouped you should stumble across Marine enemies, steal the Shinra Beta armour from them.
  • After defeating J-E-N-O-V-A, do NOT forget to pick up that Ifrit materia.

Costa del Sol
  • The Four Slots sold at Costa Del Sol will stop being sold at some point during the game.

Gold Saucer Chocobo Races
  • After escaping Corel Prison and enter the room with the Jockey's, pick up the Ramuh materia or it is lost forever.

Gold Saucer
  • The Parasol can only be won at the Speed Square with a score of 5000+ before you get to the Temple of the Ancients.

Fort Condor
  • If you never fight at Fort Condor and let the opponent reach the top, you will never have the opportunity to get the Vagyrisk Claw from the boss battle. **READ THE EXTRAS SECTION**

Cave of the Gi
  • Upon entering the first area, you will notice a shiny blue support materia, Added Effect. You can get it via the next room, don't forget to go back and grab it.

Rocket Town
  • Talk to the old man standing in front of the Item Shop, talk to him until he asks you to look at the rocket, do this to recieve the Yoshiyuki. You can't get this anywhere else or later in the game.

  • The nearby weapons shop also sells a Shotgun for Vincent, they eventually stop selling this after Disc 1, so get it while ya can.

Weaponsmith's House
  • Once you have the buggy, take it back to the eastern continent via Costa del Sol and use it to cross the river near the large forest. There is a cave there with a sleeping old man. If you talk to the old man, he will give you game statistics -- number of battles, number of escapes. If you talk to him when the last two digits of your number of battles fought are the same (255 or 433, for example) he will give you either an accessory (if they're even) or Mythril (if they're odd). You want the mythril.

  • There's a house near Gongaga, owned by a weaponsmith. After you get the Tiny Bronco, the weaponseller is home. If you have the Mythril, ask him to talk about something else and he'll bring up that he needs it. Offer it to him and open the small chest in the upper hall, and *not* the large one. Aeris's final limit break is inside.

Temple of the Ancients
  • Luck Plus materia found in the main area, you'll need to navigate to it.
  • Morph materia near falling rocks puzzle.
  • Princess Guard in room IIII of the clock puzzle.
  • Ribbon in a chest in room V
  • Trumpet Shell in toom VII
  • Megalixer in room VIII
  • Bahamut materia after fighting Red Dragon.

Sleeping Forest

  • At the screen right before entering the Sleeping Forest, a red dot will randomly appear and move around the screen. This is the Kujata Materia. The player must chase it and pick it up to acquire it. However, if the player's Materia inventory is full Kujata Materia will be lost forever. Usually if a player attempts to pick up a Materia when the inventory is full the game will notify the player and ask them to remove Materia first. Due to poor programming this never happens with Kujata; the player receives the message that they have acquired the Materia, but upon entering the Materia inventory the Materia is not there, as there was no room to place it in.

  • Although it's not lost forever (I don't think) don't forget to pick up the Enemy Skill materia hiding behind the bed where you sleep. There are some good materia in these houses such as Comet so pick them all up while you're here.

EXTRA!

  • There are only three instances for you to learn the Trine enemy skill, and one of them is during Disc 1, when you fight Materia Keeper at Mount Nibel. Also, if you want to master each of the four Enemy Skill materia, you should also note that fighting Godo after you get the fourth is the only way to achieve that.

You can also STEAL the Vagyrisk Claw from the Bagrisk enemy. Check http://finalfantasy.wikia.com/wiki/Bagrisk for locations. The thing is, the probability of stealing them from Bagrisks is relative to your characters level. Anything past 77 you have no chance of getting. If your characters are below 77 you have about low chance of it happening. They say the best time to steal that item from them is level 11 but that's impossible.

If you haven't started the “Yuffie Stole my Materia" Side Quest, I would advise to do so now, you can start this quest at any time during Disc 1 and Disc 2 but you will not be able to complete this during Disc 3. Failure to complete this side quest will result in you not being able to access Turtle's Paradise No. 6 & MP Absorb Materia. Find out more about this quest here on Jegged.com.[jegged.com]

A small few of these items aren't necessarily lost forever, but it's a good idea to grab them while you're there!
Missable Items on Disc 2!
Gaea's Cliff

  • A Javelin is found in a chest.
  • The hidden Ribbon found inside Gaea’s Cliff can be permanently lost, although it’s still not a lost-forever per se, but definitely worth picking up as you're there. It's found in a hidden room. Inside the first cave, there will be a point when you cross an ice bridge to the right. The visible path curves up, but keep going right and there is the hidden room.

The Crater

  • Earth Mallet is a rare drop from the enemy 'Gigas', fought ONLY on the first screen of Whirlwind Maze (On the slope leading to the crater)

    From the wiki:

    "Gigas has the rare Gigas Armlet to steal, and also drops the extremely rare Earth Mallet, which the player can only obtain from the Gigas as long as they did not steal the Gigas Armlet first.

    The chance for Earth Mallet to be dropped increases if Gigas casts Quake3 at least once in battle, but stealing a Gigas Armlet reduces it to 0% regardless if Gigas casts Quake3 beforehand or not."

  • Close to where you see the Highwind, look for a Neo Bahamut materia on the ground.
  • MP Turbo found in the area after a boss fight with JENOVA.
  • Poison Ring in a chest in that area too.

Mideel

  • Enter the 'materia shop', there's a door at the back, check it, it's locked. Go to the walkway around the accessory shop and walk unti you hear a slight creak, examine this area for a key, take it back to the door, tell the TRUTH when it breaks and you get the Curse Ring. (There is another chance to get one of these later)

    **Must be done before earthquake**

  • A cursed ring can be stolen from a boss battle that occurs here after some story progression.

  • Although not lost forever, it's worth getting a materia here from the white chocobo... If you don't want me to spoil it don't read the next line if you wanna work out how to get it for yourself.

    Back at the chocobo ranch a girl will tell you how White Chocobos like to be scratched "Behind the ears", use that knowledge here.

Mt. Corel
  • Sneak steal a Warrior Bangle from the Eagle Gun.
  • Don't crash the train, you'll lose the huge materia, and it costs a lot to buy an Ultima Materia. IIRC, if you manage to stop the train and save the town, it's the only way to get Barret's Catastrophe Limit Break.

Fort Condor
  • Save the game before entering, if after the battle the old guy sat at the table in the building doesn't give you Huge Materia, reload and try again to get the huge materia as a reward.
  • After the baby hatches, get the Phoenix materia, this is your last chance.

Junon
  • While on your way to the Underwater Reactor, defeat Submarine Crews to obtain the Shinra Beta armour.
  • Also steal from the Submarine Crew enemies to receive the rare item the 8-inch Cannon.

Underwater Reactor
  • Make sure you steal from Underwater MP's (Guys in the grey/beige uniform) to get Shinra Alpha, it's your last chance.
  • After boss battle, Battle Trumpet, Scimitar and Leviathan Scales are all found in chests in this area, don't miss them.

Rocket Town
  • Steal Ziedrich from Rude.
  • Another Huge Materia around here so don't miss that.

Gelnika
  • Steal from Reno and Rude in battle for another Ziedrich and a Tough Ring.
  • Although not lost forever I don't think, there's some good stuff in here. Especially the 2x cut materia stuffed in the top right corner of the middle room. Definitely worth getting.


You may want to read the extra section at the bottom of this post before continuing any further!

Diamond WEAPON
  • Steal Rising Sun from it, it's nothing great but it's a one time item.

Midgar

A lot of stuff here so here we go.

  • Upon landing in Midgar you should be in Sector 8, look around for the Shadow Maker enemy, steal a Graviball from this if you didn't obtain it earlier. It's a rare steal so good luck!
  • Aegis Armlet, Starlight Phone and Max Ray in the underbelly of the city.
  • When you reach the trian tunnels, head all the way down and you'll find every type of 'source' item, such as power source, magic source etc. Keep going past Red XIII and you'll find the W-Item. (You can dig this up later in bone village if missed so don't worry.)
  • Steal Ziedrich, Minerva Band and a Tough(Touph) Ring from the Reno, Rude and Elena fight.
  • Go through the train tunnels and take the stairs to find a Behemoth Horn, if you don't see it on your way up go back down and up until it appears.
  • Check item shop on the second floor for a Pile Bunker and a Master Fist.
  • On floor 63 there is a Glow Lance, get.
  • In a locker on the 64th floor there is a HP Shout, this may be a duplicate as you may already have it, if not it's your last chance.
  • Last Chance to read the second Tutle's Paradise flyer.
  • The ground below the ladder leading to the Sister Ray only contains Grosspanzers - defeat the Grosspanzer∙Big (The turret) part of this enemy to get an 8-inch cannon with a 100% drop chance.
  • **IMPORTANT** Have Barret in your party as you climb the stairs in the rain after the Proud Clod boss to get his ultimate weapon, Missing Score, if you don't you will never get it.
  • The SOLDIER 1sts are your last chance to get Shinra Alphas, so steal from them.

EXTRA!

Remember to visit Lucrecia's Cave for Vincent's limit break!

All four Huge Materia are lost-forevers, since you can fail each quest to get it. Furthermore, if you don’t get each Huge Materia, you will prevent yourself from getting the Bahamut ZERO materia, since you need the blue Huge Materia to get it (and since you also need the Bahamut and Neo Bahamut materia, it’s easy to miss the opportunity of getting this summon).
The Leviathan Scales must be collected before leaving the underwater reactor under Junon. Furthermore, failing to get it will prevent you from getting the Steal as Well and the Oritsuru inside the Da-Chao fiery cave.

**To obtain the Alexander Materia**

After obtaining the Highwind (it is also possible with a mountain Chocobo+Tiny Bronco) Head to the Great Glacier, find and touch the hot springs. Then take the path north to the great snowy field and find your way to the centre cave. The cave entrance faces south, so go right of the entrance to the east to make it to the mountain path with the cave. Enter the cave to find a blue woman. Talk to her. If you touched the hot springs, she will fight you (Snow). When she dies, she'll drop the Alexander materia, if somehow you forget to pick this up and leave it is lost forever. :3

You can still dig up Bahamut ZERO, Phoenix and W-Item later in Bone Village if missed. **I can't personally verify this yet, but I've been told it's possible**

If you haven't started the “Yuffie Stole my Materia" Side Quest, I would advise to do so now, you can start this quest at any time during Disc 1 and Disc 2 but you will not be able to complete this during Disc 3. Failure to complete this side quest will result in you not being able to access Turtle's Paradise No. 6 & MP Absorb Materia. Find out more about this quest here on Jegged.com.[jegged.com]
Missable Items on Disc 3!
I should note that on Disc 3, there is an enemy skill that the enemy in question only uses once per save file, meaning after it is used and you saved it, the monster will not use it again.

It's called Pandora's Box and it's the death move of the first Dragon Zombie you come up against in the Northern Cave, so make sure you save it before heading into there and having Enemy Skill equipped before you go up against one!

And as for items, well, there isn't any! (That I know of, please correct me if I'm wrong.)

You can look back to see if you can get any items that may not be lost-forever...

About your Vagyrisk Claw post "They say the best time to steal that item from them is level 11 but that's impossible." It's VERY possible. Did it with a lvl 11 Tifa twice already. Just keep her in your party whenever possible, but dead at all times. You should reach the Cosmo Canyon area with her at level 7 or so, so she actually needs to gain a few levels lol. Yea I get the full inventory as a challenge, I've attempted it but the items in the gold saucer roller coaster are just to unusual. And I also love FF7 and all the FF's beat every numerical up to 13. First one I played was 8 on pc but after 8 I had to get 7 and eventually a psx and tactics/FF9 then I would play the rest from there. Great series and imo 7 had the most solid all around gameplay. Battle system still holds up well.

Is there any guides for just missable materia I'm not concerned with wading through all these items filling up the item inventory means nothing to me.

@nullNOVA I know for sure that the iphone app and what can be downloaded to a PSP (from back in 2013) you can. I did it by accident because I was bored with AP grinding but now it is my go to for when I get the other enemy skill materias.
