In the Setting up the Material section, it mentions that it might have auto imported your textures with the model, but if you don't have any .mtl file, that you'll need to import the PNG files yourself. At that point in the guide you've already saved your .upk file, and that is where you're going to import your textures if they weren't there already.
I wait until the end to go over file structure in more detail because where the .uc and .upk file are is not important until its time to assemble the mod to be compiled and cooked by the modding tools, which is one of the final steps before uploading it to the workshop.
File structure is very important. I highly suggest you explain the file structure before you explain how to get the model setup, and then you show how exactly how to make the scripts and put them where they need to be.
I'll keep messing around with the UV and see if anything changes for the better. I'll write you back as soon as I fixed it, hoping that it might help for other people having the same problem as me.
