My biggest issue is that sometimes resources do not get delivered, even though I thought I had plenty of stock. Probably I should be more restrictive on the general UDepots (as you also say in your explanation), I think I applied the term "distant" too loosely.
Besides that, slightly "remote" production sites tend to get clogged up (halting production entirely) and nothing gets delivered to the central mech depots because it is out of drone range. Too bad drones don't drive through contagious drone control areas

Last resort you can tinker with the desire quota and flag one of them as no shuttles allowed, really making it local. And if none of that works you can always turn off the AI on a shuttle depot one at at a time.
You can have as many Mech depots as you want. If you have two of the same depot, the depot with the most of that needed resource will be chosen.
That gets interesting if say that depot is really far away from a duplicate depot of the same resource.
Take a look at the gameplay strategy section. To best optimize flight and distribution its best to centralize all the mech depots as close as possible. That way you get a cheap form of load balance. But if you cant or you just want to have two depots on opposite side of the colony then thats ok too provided you know what can happen when either one is much lower than the other one.
And what if I put both a multi-resource-udepot and a udepot close to a factory, do drones move resource to udepot first? I guess it will be the closest one.
