Yesterday had tried using Yari Ashigaru, apart from the added micro management for them to get into spear wall, as soon as Katana comes in, they die. If I put them in spear wall, they die against Katana too, so do not even get any where near the results I have experienced against them.
Have read your Avatar Mode Walkthrough, which in my mind made me believe that my core of Katana and nuns should be a workable core against Yari Ashigaru core armies.
Against cavalry they will be overstretched in both defense and offense roles. Bow ashigarus will be negated by Naginata Samurai very quickly, it is difficult to use them even as bait. I can see why cavalry overrun your build, why not try swapping two nuns into monk cavalry? Because if you are running nuns you have the Ikko DLC, they have roughly the same function, but monk cavalry are more flexible because of speed and anti-cav in a pinch.
For a traditional build, see Avatar Mode Walkthrough, where I went through Avatar mode again using a traditional general and planned for it during the FOTS era. Albeit that was written something like ten years ago and now I play Genshin Impact and Warhammer II, so your mileage may vary.
Will try to continue gaming with my core 3-4 Ashigaru bow's, 4-5 Katana Samurai and 2-4 Warriors nuns. (10k and 14k respectively) Just find when I have cavalry sorties, if I lose there, the game thereafter is normally a losing battle no matter what I do.
I would also note, that the building your first army section is Fall of the Samurai, so is not really benefiting those playing vanilla as it were, And sample builds is not true to the title, only being one list, I would suggest more builds are given as workable starting points
