Perfekt krispigt, smakrikt och med en hint av fänkål. Ett knäckebröd som är lika nyttigt som gott.

Recept:
300g fullkornsråg (vi tog svedjeråg)
100g fullkornsvete (vi tog ölandsvete)
260g vatten
80g surdeg
8g salt
1 tsk mortlade fänkålsfrön (valfritt)

Blanda alla ingredienser, täck med lock och låt vila i rumstemperatur i 6 timmar. Ställ sedan in i kylen över natten.
Väg upp 50g deg, rulla till en boll, vänd den lätt i mjöl, platta ut den med handen och kavla sedan på mjölat bakbord till en cirka 20 cm stor cirkel.
Rotera degen lite mellan kaveltagen så att den inte fastnar i bordet. Kavla några varv på båda sidor med kruskavel eller nagga med gaffel. Ta till exempel huvudet på en spritstyll och stansa hål i kakan.
Grädda i 200°C på bakstål i cirka 6 minuter, eller tills kakan fått lite lätt färg. Rotera eventuellt kakan ett halvt varv i ugnen om den gräddas ojämnt.
Låt svalna på galler och förvara sedan i burk med lock.
