1. Prep the meat

Remove and trim swan breast meat.
Mince it (with a grinder or finely chop by hand).

2. Mix ingredients

Combine minced meat with:
Worcestershire sauce
Rosemary & sage
Pepper
If mixture feels dry or doesn’t bind, add:
1 egg + a handful of breadcrumbs

3. Form patties

Divide into 4 portions.
Shape into burger patties.
Chill in fridge for 30 minutes.

4. Cook

Cook over medium heat.
Avoid overcooking (lean meat dries out easily).
Season with salt just before or after cooking.

5. Assemble burgers

Add patties to buns with:
Lettuce, tomato, pickles
Mayo + fruit chutney (e.g., peach or apple)

6. Serve & enjoy

Expect a rich, slightly gamey flavor.
