Omelette espagnole :

Etape 1
Eplucher et couper les pommes de terre, ainsi que l'oignon et le poivron ; mettre le tout dans un saladier et saler.
Etape 2
Chauffer dans une poêle une bonne quantité d'huile (presque un centimètre de profondeur). Egoutter l'eau qu'ont formé les pommes de terre et verser tout dans l'huile bien chaude.
Etape 3
Laisser cuire 10 min à feu moyen en remuant de temps en temps.
Etape 4
Battre les oeufs dans un saladier. Egoutter les pommes de terres, avec le poivron et l'oignon et le mélanger aux oeufs. Vider l'huile d'olive qui est restée dans la poêle, en laisser à peu près une cuillère à soupe pour y faire cuire l'omelette.
Etape 5
Réchauffer la poêle, verser le mélange dans l'huile bien chaude.
Etape 6
Attendre 5 min et faire glisser l'omelette sur une assiette. La retourner en plaçant la poêle sur l'assiette et retourner d'un geste vif. Laisser cuire 5 min de l'autre côté.
Etape 7
Déguster chaude ou froide.
