Reteta papanasi:

500 grame brânză grasă de vaci
100 grame zahăr
2 ouă
1 linguriţă rasă de bicarbonat
1 lingură zeamă de lămâie
1 plic zahăr vanilat
1 linguriţă coajă de lămâie rasă
1 vârf de cuţit de sare
200 gr făină (plus 1-2 linguri)
300 grame smântână
200 grame dulceaţă
100 grame zahăr pudră (preferabil vanilat)
500-700 ml ulei pentru prăjit

Mod de preparare:

Cerneţi bine făină. Amestecaţi brânză de vaci cu zahărul, ouăle, sarea, zahărul vanilat şi bicarbonatul stins cu zeamă de lămâie.

Trebuie să obţineţi un aluat moale, dar care să se desprindă de pe mână. Puneţi uleiul la încins într-o tigaie sau cratiţă adâncă.

Scoateţi papanaşii, pe măsură ce sunt prăjiţi, şi puneţi-i la scurs de excesul de grăsime pe un prosop de hârtie. Mai întâi, veţi scoate bilele pentru că, fiind mai mici, se vor face primele.

Papanaşii se servesc cu smântână şi cu dulceaţă, dar şi cu zahăr pudră.
