I'll be honest, over the years my beef bourguignon and beef stroganoff have become more and more similar. I like a thick beef stew as much as anyone, and I season to my tastes...
Low and slow, with bay, thyme, stock (beef stock for stroganoff, chicken stock for burguingnon), wine, and yeah a splash of fish sauce too. For stroganoff I like a cut with plenty of connective tissue that will shred easily in the noodles, like short ribs. Extra mushrooms (chunks not slices) instead of onions and carrots, a bit thicker sauce reduction and a scoop of good sour cream at the end.
