There are online versus achievements but those are played against 2 random players, if you can't find anyone online you'd need to find another 2 players to boost those achievements for. Everything else would be offline content or the online co-op mode which would only need one other player.

There's no reason why it shouldn't work unless your install of the game runs differently to mine for some reason. Unfortunately I haven't touched the game in over 2 years so I can't really help with that, sorry.
