There's 2 FgColor values for for both of the lines above because those are the colors your health blinks to back and forth, you just have to make both values the same so if you want your own health to be solid color so it would look like this:

The hat style option works just fine, If you keep having problems with it I suggest you reinstall the hud, eitherway I do not know what would be causing it to not function. As for the class selection menu the numbers still work, you may have your numpad disabled.
I don't particularly see a need for making the plr progress hud any more minimal, though if you want to here's how you do it: Replace the entier content of ObjectiveStatusMultipleEscort.res in /resource/ui/ with this code [pastebin.com]
