Sorting of Games
I would like to see the list of games to backup sorted by last modified date of the game save files/directories. Not sure what the "Sort Entries" option does but when I select by "modified date" that does not seem to sort my entries in any particular order. What am I missing here?

You're correct; the last modified option is indeed what you're looking for.
It appears to be a bug in how GameSave Manager is sorting the results.

Due to how minor of a concern this is, I'm reluctant to release a new version to address it.
If--and when--another 3x build is released, I'll make a point at looking into this.
