Exporting smd
I have my model. It is textured, it is modeled, I assigned it to the bip head bone, and I have it selected in object mode. However, when I do file>export>smd file and choose the hat, it just says, "SCENE UNCONFIGURED. See source engine export panel in scene properties."

It might be that your output folder needs to be specified. This is an image of the old smd tools script, but it should look similar: https://dl.dropboxusercontent.com/u/10100459/BlenderImages/smd_export_output.jpg

Also make sure you are exporting .smd file types and not .dmx file types. The latest smd tools script defaults to .dmx (you should be able to change it from the same panel as above).

Wait how do I take a screenshot of it? When I try to take a screenshot it doesn't take one, I'm going to show it to my friends
You could use Steam's F12 feature, or you could just manually take a screenshot (press the "Print Screen" button on your keyboard > open an image editing program like paint or photoshop > press paste > save the image). You can also use windows snipping tool.
