Engine path is needed if you want to launch compile .qc from Blender. It's not required to export smds and dmxes. You can compile later with studiomdl.exe directly or use helper like Crowbar.

You don't. You add it as Triangulate modifier to mesh object. You don't need to apply it, just keep it, then re-export.
