SOLVED!!!
So for anyone else in future reading this, here is what I needed to do to get it working.
First off download the Heroic Launcher from the discover section in desktop mode and use it to download the game from GOG.
Then download the lastest version of Proton GE from within the Heroic Launcher. ( GE-Proton7-46 at time of writing this )
From your DOS2 game settings set the new version of Proton to run it.
Also from DOS2 game settings manually specify the .exe to run from DE: Divinity - Original Sin 2\DefEd\bin\EoCApp.exe No
Now if all has gone well it should launch from the Heroic Launcher.
Now download Protonup-QT from the discover section and use it to download the latest version of Proton
In desktop mode now close steam and re open it, now you bascically need to do the same thing again within steam....
From your DOS2 game settings set the new version of Proton to run it. ( GE-Proton7-46 at time of writing this )

It should now be able to run from gaming mode within Steam as if it were bought from Steam. It took me quite a bit of trial and error and googling to figure it out so I hope that helps someone else as the game is much cheaper of GOG than purchasing from Steam.
